This weekend I picked my favorite eatable ditch weed, rhubarb.
Now whenever I hear that word my mind goes to pie, squares and other tasty desserts, but apparently that was not always the case. This plant for years was used to get things going for medical purposes, haha.
History of Rhubarb
Now if you are wondering, like I was, if rhubarb is healthy… simple answer is YES. Rhubarb is basically a supper food according to this:
Rhubarb is rich in antioxidants, particularly anthocyanins (which give it its red color) and proanthocyanidins. These antioxidants have anti-bacterial, anti-inflammatory, and anti-cancer properties, which help protect you from many health-related issues such as heart disease, cancer, and diabetes.
Health Benefits of Rhubarb
So aside from chewing on a stalk of the stuff, what are some good ways to enjoy rhubarb? I know a lot of these top recipes couple these stalks with strawberries, but here are some suggested items you can make. I have to say that number 8 makes me feel intrigued and scared at the same time… “Rhubarbecue”, haha
Mom has always made stewed rhubarb which I have always enjoyed, especially with homemade bread. But you don’t have to eat the stuff, you can drink it too. A refreshing beverage is rhubarb punch and this recipe also makes room for freezing and adding a little extra kick to the drink.

Now today is “National Wine Day” and guess what… you can use rhubarb to make wine too. I have to say, reading the instructions quickly, it looks pretty simple, haha. Today might be the perfect time to start a batch. Feel free to share, haha.
I’ll leave you with the video showing the growing and harvesting of this vegetable that was made by a guy that is REALLY passionate about this crop. Enjoy.
